1 cup of gluten free old fashioned oats
1 cup of water
1 medium-sized banana
2 teaspoons of ground cinnamon
2 teaspoons of extra virgin olive oil
1/4 cup of plain Amande almond yogurt (optional)
Bring pot of water to a rapid boil. Once the water boils, add the oats and drop to medium/low heat. Let the oats absorb a generous amount of water for about a minute. Then continuously stir until the rest of the water is absorbed. Remove from stove. While in pot, slice 3/4 of the banana into half slices and submerge in oats to bring the temperature of the oats ups and soften the banana. Begin to mash the banana in the oats while stirring until the oats are glossy. Add to bowl. Dice the remaining 1/4 of banana. Garnish with cinnamon. Drizzle yogurt on top.
