Ingredients
- 1 cup of Tinkyada Brown Rice Penne Pasta
- Juice of 1/2 a lemon
- 1 cup of fresh basil
- 3 cloves of garlic
- Sea salt
- Black pepper
- Extra virgin olive oil
Directions
Fill a pot half way with water, add a decent amount of salt to water (this flavors the pasta), and bring the water to a rapid boil on high heat (No. 10). Once the water begins to boil, add the pasta and set a timer for about 13 minutes. To make the basil pesto, add the basil, garlic, lemon juice, salt, pepper, and olive oil to a food processor. Pesto shouldn't be too thick, but not too runny (i.e., consistency of pasta sauce). Taste and correct seasoning. When timer for pasta goes off, drain pasta and place back in pot. Now add the basil pesto to the pasta in the pot and stir.
