Ingredients
- 1 pound of grassfed ground beef
- 4 bell peppers
- 1 medium sized onion
- 1 avocado
- Herbs de provence
- Sea salt
- Black pepper
- Extra virgin olive oil
Directions
Heat up a pan to medium heat (No. 5). While the pan is heating up, slice peppers and onion into reasonably thin slices. Once the pan is hot, add olive oil and ground beef. Season the beef with salt, pepper and herbs de provence. Work the ground beef and dice it with your cooking utensil until pink is nearly gone. Add peppers and onions to the dish, place a lid on the pan, reduce the heat to medium-low (No. 2), and let the dish sit for 25 minutes. Stir once halfway through. Once the 25 minutes are up, remove the pan from the stove and let the it sit for about 5 minutes. While the pan is sitting, add a whole avocado to a bowl and mash it with a fork or potato masher. Once your pan has cooled, add the beef and peppers to a bowl (or dish) and add the mashed avocado to the top of it. Garnish with herbs de provence.
