Ingredients
- 1/2 of a butternut squash cubed
- 2 medium-sized shallots diced
- 4 sprigs of rosemary diced
- Sea salt
- Black pepper
- Extra virgin olive oil
Directions
Place your butternut squash and diced shallots in a large pot with salt, pepper, and olive oil on medium-high heat (No.7). Stir every 1-2 minutes until shallots becomes translucent (about 7-8 minutes). Reduce heat to medium-low heat (No.2) and place lid on top of the pot. Let it sit for about 4-5 minutes or until the squash no longer makes a clunking noise against the pot with it's stirred, or when fork tender. Remove from stove, add the fresh rosemary, and correct the seasoning.
