Ingredients
- 2 hard boiled eggs
- 2 cups of kale
- 2 tablespoons of extra virgin olive oil
- Sea salt
- Black pepper
- Herbs de provence
Directions
Take your kale and cut the leaves from the stem. Discard the stems and chop up the kale into bite sized pieces. Place the kale into a steamer for 2 minutes. Drizzle a little extra virgin olive oil on the bottom of your bowl or plate. Now add a little sea salt, black pepper and herbes de provence. Place 1 sliced egg on top of the oil. Grab a bunch of freshly steamed kale and place it on top of the egg. Now place the second sliced egg on top of the kale. Add a little more sea salt, black pepper, herbes de provence and drizzle on a little more extra virgin olive oil.
