Ingredients
- 1/2 of a red cabbage thinly shredded
- 1 large red onion sliced
- Apple cider vinegar
- 1 tablespoon of ground mustard
- Extra virgin olive oil
- Sea salt
- Black pepper
Directions
Place onions in a pot with salt, pepper, olive oil on medium-high heat (No. 7) to caramelize. Once onions begin to sizzle, stir often until they become wilted (about 5 minutes). Add shredded cabbage, a little more olive oil, salt, and pepper. Stir often until cabbage is wilted (about 10 minutes). Move cabbage to the side of the pot, turn heat to max (No. 10), and add enough apple cider vinegar so that the sizzle becomes muffled. Wait 1 minute for the vinegar to burn off. While vinegar is burning off, add ground mustard. Once the vinegar has burned off, stir all ingredients together well, put a lid on the pot, and reduce heat to medium-low (No. 2) for about 10 - 15 minutes. Remove from stove and correct seasoning. You may need to add a little more mustard just to give the cabbage a milky coating.
