Ingredients
- 1/2 cup of basmati rice
- 1 cups of water
- 1 medium sized yellow onion
- 1 avocado
- 2 tablespoons of extra virgin olive oil
- sea salt
- black pepper
- rosemary
Directions
Dice up the onion and place it in a pan with a dash of Olive Oil on medium high heat.Cook the onion until it becomes transparent, roughly 8 minutes. Remove the onion and place it in a separate bowl with aluminum foil to cover it and set aside. Add the rice and water to the same pan used to cook the onion in to flavor the rice. Cook on high. Once the water starts to boil, reduce the heat to the lowest setting, stir once, cover the pan and let is sit untouched for about 17 minutes. Remove the rice from the stove, fluff it up and add the onion, rosemary, salt and pepper. Stir and place in a bowl. Add diced avocado and garnish with rosemary once more.
