Ingredients
- 3 medium-sized red potatoes chunks (cut potato in quarters, then slice)
- 1 lemon zest
- Oregano (ground or fresh is better)
- Extra virgin olive oil
- Sea salt
- Black pepper
Directions
Place red potatoes in a skillet on medium-high heat (No. 7) with salt, pepper, and olive oil. Once the potatoes start to sizzle, stir often for about 7-8 minutes, placing the lid on in between stirs. Reduce heat to medium-low (No. 2) and let the potatoes simmer for about 15 minutes or until fork tender. Remove from stove and add the zest of 1 lemon, oregano, and correct the seasoning if need be.
